HOI AN CHICKEN RICE – THE BEST STREET FOOD IN HOI AN

To make the Best Hoi An Chicken Rice, Hoi An people carefully select the rice of top quality, free-range chicken & fresh organic herbs from Tra Que village. Below are needed ingredients to cook this dish :

Ingredients to make Hoi An rice chicken

  • 1 free-range hen of 1.5 kg, which will bring much nicer checken meat flavor than factory-farmed ones
  • 2 bowl uncooked ordinary rice
  • 1/4 bowl uncooked sticky rice
  • 1 crushed fresh ginger
  • 1 teaspoon of salt
  • 3-4 dry onion
  • 1 teaspoon turmeric
  • 1 clove of garlic, minced
  • 1 lime
  • 3 tomatoes, thinly sliced
  • 2 bunches of lettuce
  • 1 white onion, thinly sliced, marinated with 1 teaspoon sugar, 1 teaspoon fish sauce, and 1 teaspoon vinegar.
  • Finely chopped Vietnamese mint.
  • Salt and pepper to taste.

For coating sauce: 1 teaspoon sugar, 1 teaspoon fish sauce, and 1 teaspoon lime juice. Mix these three ingredients together, add in 1/8 cup water and chili if desired.

The recipe of how to cook Cơm Gà Hội An

1. How to boil the chicken & get torn chicken meat.

We wash the chicken thoroughly with water, salt & lime to erase the smell, then put the chicken into the pot, covered  by fresh water, together we add some dry onion, tumeric & crushed fresh ginger on.

We cook until boiling them simmering in 15 minutes and stop while keeping the chicken socked in the broth about 20 minutes more to make sure it cooked with wonderful sweet meat.

After that, we take the chicken out and cool it on a rack, then we tear the boiled chicken into thin slices & mix them with the marinated onions & Vietnamese mint.

2. How to cook yellow rice

After washing the rice, we mix the ordinary rice and sticky rice together, and put them in the boiling chicken broth so that the level of water is about 1cm above the level of the rice. Then we add 1 teaspoon of salt and bring to a boil. Please remember to lower heat and simmer the rice until cooked. The standard cooked rice should have a glossy yellow color.

3. Decoration & enjoying the dish

Finally, we will arrange rice on a large dish, which we put on the top with chicken and tomato slices. Plus, we add lettuce and pour the coating sauce over the chicken rice as you wish.The dish is ready for your yummy….!
